My Go-To Brunch Platter
Whether I’m hosting brunch, heading to a potluck, or someone asks me to bring something to share, there is a very good chance I’m bringing turkey croissants. They are easy, they look generous on a platter, and people actually eat them. Which is what I emotionally need, because I will be very sad if my food goes uneaten.
I usually get the croissants, turkey slices, and greens from Costco. I prefer arugula because I like the peppery bite, but if kids will be eating them, spinach might be the safer choice. The rest usually comes from Trader Joe’s: mustard aioli, fig jam, and whatever sliced cheese is speaking to me that day.
If I want to make things easier on myself, I’ll prep the croissants the day before or the morning of by slicing them in half and opening them up. Sometimes I’ll also pair the turkey and cheese slices together, fold them in half, and set them aside so they’re already the right size when it’s time to assemble.
The morning of, I place the croissants on a baking sheet, brush a little melted butter over the tops, and sprinkle them with Colima salt from Matriarca. Honestly, anything Chef Marcela sells, I’m probably buying, because she has exceptional taste and very high standards for what she puts out. I only bake the croissants for a few minutes, just enough to toast them slightly. I want a little crunch, but I do not want anyone to have to work for it. Then I let them cool completely.
Once they’re cool, I start assembling. I add the spinach or arugula and then place the turkey and cheese. I don’t even bother with the spreads. I serve them on the side and let people help themselves. Another tiny shortcut equals another tiny victory for me.
